A healthy and tasty breakfast is essential to kickstart your day, but thinking of something new every morning can be a challenge. If you’re looking for a nutritious and delicious option that’s quick to make, this eggless oats omelette could be your go-to breakfast recipe. It’s ready in just 15 minutes and doesn’t require any eggs, making it ideal for vegetarians or anyone avoiding eggs. Its soft and spongy texture is loved by both children and adults alike.

Ingredients

  • 1 cup oats
  • 1/4 cup rava (semolina)
  • 1/4 cup gram flour
  • 1 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1/2 finely chopped tomato
  • 1/2 finely chopped carrot
  • 1/2 finely chopped onion
  • 1/2 finely chopped capsicum
  • 1/4 cup curd
  • 1/2 tsp salt to taste
  • 1/2 tsp chilli flakes
  • 1/2 cup water
  • 1/2 tsp Eno fruit salt
  • Oil for cooking

Method

  1. Prepare The Dry Mix: In a large mixing bowl, combine oats, rava, gram flour, cumin seeds, turmeric and salt. Add chilli flakes for an extra kick if you like your food spicy.
  2. Add Veggies: Mix in the finely chopped vegetables – tomato, carrot, onion and capsicum. These not only add colour and crunch but also increase the nutritional value of your omelette.
  3. Make Batter: Add curd and water to the mixture and stir well to form a smooth, thick batter. Ensure there are no lumps.
  4. Add Eno: Just before cooking, add the Eno fruit salt and gently fold it into the batter. This will make the omelette light and fluffy.
  5. Cook Omelette: Heat a little oil in a non-stick pan. Pour a ladleful of batter onto the pan and spread it in a round shape. Keep it slightly thick for a soft and spongy texture. Cook on medium heat until the bottom turns golden brown.
  6. Flip And Cook: Carefully flip the omelette and cook the other side until golden and fully cooked.
