Gobi Kheer Recipe
- Cleaning And Preparation of Cauliflower: Thoroughly wash the cauliflower and cut it into small pieces. Grate the pieces. Soak the grated cauliflower in hot water with a little salt for 5 to 6 minutes to remove its raw smell. Then, drain the water and squeeze out any excess moisture.
- Boiling Milk: In a large, heavy-bottomed vessel, bring the milk to a boil. Simmer on low heat to thicken it slightly, enhancing its flavour.
- Roasting Cauliflower: Heat the ghee in a pan and add the squeezed cauliflower. Fry on low heat for 10-12 minutes until it becomes fragrant and golden.
- Mixing Cauliflower in Milk: Once the milk is well-boiled and slightly thickened, add the roasted cauliflower. Cook on low heat for 15 to 20 minutes, stirring occasionally to prevent sticking.
- Enhancing the Taste: Add the sugar and let it dissolve completely. Then, add the cardamom powder and chopped dry fruits. Soak the saffron in a little milk and add it to the kheer for both colour and fragrance.
- Cook and Serve: Cook the kheer for another 7 to 8 minutes to blend all the flavours well. Turn off the heat. It can be served hot or cold.
