A new cake is trending among home bakers and cafés: the Cranberry Matcha Cake. Made with matcha powder and dried U.S. cranberries, the recipe is gaining attention for its unique flavour and striking appearance.
Soft, lightly sweet, and naturally green from the matcha, the cake gets a bright red contrast and tart flavour from the cranberries. Easy to make and healthier than most frosted cakes, it’s quickly becoming a popular choice for those looking to try something new in the kitchen.
Ingredients
Dry:
1½ cups all-purpose flour
1 tbsp matcha powder
1 tsp baking powder
½ tsp baking soda
Pinch of salt
Wet:
¾ cup sugar
½ cup vegetable oil (or melted butter)
2 eggs
½ cup milk
½ tsp vanilla extract
1 tsp lemon zest (optional)
Add-ins:
¾ cup dried U.S. cranberries
Powdered sugar for topping (optional)
Steps
Preheat oven to 175°C (350°F). Line a 6–7 inch round cake tin.
In a bowl, mix the flour, matcha, baking powder, baking soda, and salt.
In another bowl, whisk together the sugar and oil. Add eggs, milk, vanilla, and lemon zest.
Combine the dry and wet mixtures — do not overmix.
Fold in the dried U.S. cranberries.
Pour the batter into the cake tin and bake for 30–35 minutes, or until a toothpick inserted in the centre comes out clean.
Let the cake cool. Dust with powdered sugar, if desired.
