Ingredients For Arbi Leaf Pakoras

  • 8–10 fresh colocasia (arbi) leaves
  • 2 cups gram flour (besan)
  • 2 tsp rice flour
  • 1 tsp ginger-garlic paste
  • 2 green chillies, finely chopped
  • ½ tsp red chilli powder
  • ¼ tsp turmeric powder
  • ½ tsp coriander powder
  • ½ tsp dry mango powder or chaat masala
  • Salt to taste
  • Water, as needed
  • Oil for frying

Step-by-Step Recipe

  • Wash the arbi leaves thoroughly. If the stalk is thick, trim and flatten it carefully to make rolling easier.
  • In a bowl, mix gram flour, rice flour, ginger-garlic paste, green chillies, and all the spices.
  • Add water slowly to form a thick, smooth batter. Make sure it’s not runny, the batter should stick well to the leaves.
  • Place one arbi leaf on a clean surface and spread a thin layer of the batter. Layer another leaf on top, apply more batter, and repeat this 3–4 times.
  • Carefully roll the stacked leaves into a tight log, pressing the ends to keep it secure.
  • Let the roll rest for 15 minutes.
  • Heat oil in a pan. Cut the roll into 1–1.5 inch pieces.
  • Fry each piece on medium heat until golden and crispy.
  • Drain and serve hot.

Serve these hot pakoras with green chutney or sweet tamarind chutney. You can also sprinkle some chaat masala on top for extra flavour.
