White Sauce Pasta is a favourite dish enjoyed by both children and adults alike. Its creamy, rich flavour makes it a crowd-pleaser every time. However, many people make a few common mistakes while preparing the white sauce, causing lumps that ruin both the taste and texture of the dish.
If you want your pasta to taste just like the one served in restaurants, with no lumps it’s essential to learn the right technique. Here’s a tried-and-tested recipe along with tips on what to avoid.
Ingredients
- 1 cup Penne or Fusilli Pasta
- Water (for boiling)
- Salt (to taste)
- 1 tsp Oil
- 2 tbsp Butter
- 2 tbsp Refined Flour (Maida)
- 2 cups Milk (lukewarm or slightly warm)
- ½ tsp Black Pepper Powder
- Oregano and Chilli Flakes (to taste)
- ½ cup Grated Processed Cheese (optional)
- Vegetables: Finely chopped Capsicum, Sweet Corn, Carrot, Onion
Step-By-Step White Sauce Pasta Recipe
- Boil The Pasta: Begin by boiling water in a pan. Add a little salt and oil. Once the water is boiling, add the pasta and cook it for 8–10 minutes until it becomes al dente (slightly soft but still firm). Strain the pasta and rinse it with cold water to prevent sticking.
- Saute The Vegetables: If you’re adding vegetables, lightly saute onion, capsicum, corn, etc., in a bit of butter or oil. Do not overcook them—keep them slightly crisp to retain their texture.
- Prepare The White Sauce: Heat butter in a heavy-bottomed pan. Add the flour and stir continuously for 1–2 minutes. Do not let it brown, just cook enough to eliminate the raw smell. This step is crucial for a smooth sauce. Now comes the most important part – adding milk. Always add lukewarm milk slowly while whisking continuously. If you pour in cold milk all at once, lumps will form. Stir continuously until the sauce begins to thicken and becomes smooth.
- Add Flavour: To the smooth sauce, add salt, black pepper, oregano, chilli flakes, and grated cheese. Cheese will give the sauce a richer and creamier texture.
- Mix It All Together: Add the boiled pasta and sautéed vegetables to the sauce. Mix well and cook for another 2–3 minutes, allowing all the flavours to blend beautifully.
